Instructions

  1. Prepare the chicken: If using cooked shredded chicken, ensure it is fully cooked and shredded into bite-sized pieces. If using raw chicken breasts, place them in the crockpot first with some buffalo sauce to cook until tender, then shred inside the crockpot using two forks.
  2. Combine cream cheese and sour cream: In a large bowl, mix softened cream cheese with sour cream and ranch or blue cheese dressing until smooth and creamy.
  3. Add buffalo sauce and seasonings: Stir in 3/4 cup buffalo sauce along with garlic powder, onion powder, smoked paprika, and a pinch of salt. Adjust buffalo sauce quantity to taste for desired spiciness.
  4. Mix in chicken and cheese: Fold in the shredded chicken and 2 cups of the shredded cheese until well combined. If using optional ingredients like green onions, bell peppers, jalapeño, or blue cheese, add them here.
  5. Cook in crockpot: Transfer the mixture to the crockpot. Spread evenly and cook on low heat for 2-3 hours or until hot and bubbly. Stir once or twice during cooking for even heating.
  6. Add remaining cheese topping: About 15 minutes before serving, sprinkle the remaining 1 cup of shredded cheese on top and allow it to melt.
