Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 onion, chopped

Beans and Corn

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained

Tomatoes and Chilies

  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (4 ounces) diced green chilies

Seasonings

  • 1 packet taco seasoning mix
  • 1 cup water
  • Salt and pepper to taste

Optional Toppings

  • Shredded cheese
  • Sour cream
  • Chopped cilantro
  • Jalapeños
  • Tortilla chips

Instructions

  1. Brown the Ground Beef and Onion: In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is softened. Drain off any excess fat to reduce greasiness.
  2. Combine Ingredients in Crock Pot: Transfer the browned beef and onion into the crock pot. Add the black beans, kidney beans, corn, tomato sauce, diced tomatoes, diced green chilies, taco seasoning mix, and water. Stir well to combine all ingredients thoroughly.
  3. Season and Cook: Taste the mixture and add salt and pepper as desired. Cover the crock pot and cook on low heat for 6-8 hours or on high for 3-4 hours, allowing flavors to meld together.
  4. Serve and Garnish: Ladle the soup into bowls and add your favorite optional toppings such as shredded cheese, sour cream, chopped cilantro, jalapeños, and tortilla chips for added flavor and texture.

Notes

  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • To make it vegetarian, omit the meat and add extra beans or vegetables.
  • If you prefer a spicier soup, add extra diced chilies or hot sauce.
  • Leftovers store well in the refrigerator for up to 4 days or freeze for longer storage.
  • Serve with warm tortillas or over rice for a complete meal.
