Ingredients

Scale

Chicken and Seasoning

  • 12 Tablespoons vegetable oil
  • Salt and pepper, to taste
  • 1.5 pounds boneless, skinless chicken breasts (about 2 large chicken breasts)

Creamy Sauce

  • 4 ounces (½ block) cream cheese, softened to room temperature
  • 3 Tablespoons unsalted butter, softened to room temperature
  • 10.5 ounce can cream of chicken soup (recommend low or no sodium if sensitive to salt)
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (recommend low or no sodium if sensitive to salt)
  • 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix (or your favorite Italian seasoning mix)

Pasta

  • 16 ounce box angel hair pasta

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper to taste. Heat 1-2 tablespoons of vegetable oil in a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until lightly browned. This step helps to lock in flavor before slow cooking.
  2. Mix the Sauce: In a bowl, combine the softened cream cheese, unsalted butter, cream of chicken soup, minced garlic, chicken broth, and the packet of Good Seasons Dry Italian Salad Dressing Mix. Stir until smooth and well blended.
  3. Assemble in Crock Pot: Place the seared chicken breasts at the bottom of the crock pot. Pour the creamy sauce mixture evenly over the chicken, ensuring that the breasts are covered.
  4. Slow Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and fully cooked.
  5. Shred the Chicken: Once cooked, remove the chicken breasts and shred them with two forks. Return the shredded chicken to the crock pot and stir it into the sauce to combine fully.
  6. Cook the Pasta: While the chicken finishes cooking, prepare the angel hair pasta according to package directions until al dente. Drain and set aside.
  7. Serve: Spoon the creamy chicken mixture over the cooked angel hair pasta and garnish with fresh parsley or parmesan cheese if desired. Serve immediately.

Notes

  • For a lower sodium version, use low or no sodium cream of chicken soup and chicken broth.
  • You can substitute boneless, skinless chicken thighs if preferred, but adjust cooking time as thighs may take slightly longer.
  • Make sure to soften the cream cheese and butter to room temperature for easy mixing.
  • This recipe pairs well with a side of steamed vegetables or a crisp green salad.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
