Instructions

  1. Prepare the chicken: Rinse the chicken breasts under cold water and pat them dry with paper towels. If the breasts are thick, slice them in half horizontally to create thinner pieces for even cooking.
  2. Make the coating mixture: In a shallow bowl, combine the grated Parmesan cheese, minced garlic, breadcrumbs, salt, pepper, oregano, and paprika. Mix thoroughly to distribute the flavors evenly.
  3. Set up dredging stations: Place the all-purpose flour in one shallow dish. In a second dish, beat the eggs until smooth. In a third dish, have the Parmesan-garlic breadcrumb mixture ready.
  4. Coat the chicken: Dredge each chicken breast first in flour, shaking off the excess. Then dip it into the beaten eggs, allowing excess to drip off. Finally, press the chicken into the Parmesan-garlic breadcrumb mixture to coat evenly on all sides.
  5. Cook the chicken: Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the coated chicken breasts. Cook for about 5-6 minutes per side, or until the chicken is golden brown and cooked through (internal temperature of 165°F / 74°C).
  6. Rest and serve: Transfer the cooked chicken to a paper towel-lined plate to remove excess oil. Let rest for 3-5 minutes before serving to retain juices.
