Feta Roll Filling

Phyllo Dough & Assembly

  • 7 sheets frozen phyllo dough (thawed)
  • 1/4 cup extra virgin olive oil + more for brushing

Sweet Chili Sauce

  • 1/4 cup sweet chili sauce (store-bought)
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp Sriracha sauce
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp water

Instructions

  1. Preheat and prepare filling: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. In a bowl, combine the crumbled feta, fresh dill, fresh thyme, lemon juice, minced garlic, and a drizzle of honey. Mix thoroughly until the filling is well blended.
  2. Prepare phyllo dough: Carefully handle one sheet of thawed phyllo dough at a time, keeping the rest covered with a damp towel to prevent drying out. Fold the dough in half. Brush the top with a generous amount of extra virgin olive oil.
  3. Assemble the rolls: Place about 2 tablespoons of the feta mixture along the bottom center edge of the phyllo sheet. Fold the edges inward over the filling and smooth out to avoid air pockets.
  4. Roll the dough: Roll the dough tightly into a log, stopping about one inch from the end. Brush the bottom edge with olive oil and complete the roll tightly, ensuring it is sealed. Place the roll seam side down on the prepared baking sheet.
  5. Brush and bake: Brush the tops of all the feta rolls with more olive oil. Place the baking sheet on the center oven rack and bake for 20 minutes, or until the rolls are golden and crispy.
  6. Prepare the sweet chili sauce: While the rolls bake, combine the sweet chili sauce, soy sauce, honey, Sriracha, lemon juice, and water in a medium saucepan over low heat. Warm gently until just simmering, then remove from heat immediately and transfer to a serving dish.
  7. Finish and serve: When the rolls are baked, brush each one generously with the warmed sweet chili sauce. Garnish with fresh thyme and serve warm, offering the remaining sauce for dipping.
