Ingredients

Scale

Main Ingredients

  • 2 cups cooked chicken, diced
  • 2 cups broccoli florets
  • 2 cups cooked rice
  • 2 cups shredded cheddar cheese

Sauce and Seasonings

  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Topping (Optional)

  • 1/2 cup crispy fried onions

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Prepare the Broccoli: Steam or blanch the broccoli florets until just tender, about 3-4 minutes, then drain and set aside.
  3. Mix the Sauce: In a large bowl, combine the cream of chicken soup, milk, sour cream, garlic powder, onion powder, salt, and black pepper. Stir until well mixed and smooth.
  4. Combine Ingredients: Add the cooked chicken, broccoli, cooked rice, and 1 1/2 cups of the shredded cheddar cheese into the sauce mixture. Gently fold everything together until evenly coated.
  5. Transfer to Baking Dish: Pour the mixture into a lightly greased 9×13-inch casserole dish and spread into an even layer.
  6. Add Cheese Topping: Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top of the casserole.
  7. Bake: Place the casserole in the preheated oven and bake uncovered for 25-30 minutes, until the cheese is melted, bubbly, and slightly golden.
  8. Add Crispy Onions: If using, sprinkle the crispy fried onions on top during the last 5 minutes of baking for a crunchy topping.
  9. Serve: Remove from oven and allow to cool for a few minutes before serving. Enjoy your creamy and cheesy chicken broccoli rice casserole warm!

Notes

  • You can substitute the cream of chicken soup with a homemade creamy sauce for a fresher taste.
  • Use brown rice instead of white rice for added fiber and nutrients.
  • Fresh or frozen broccoli can be used; just adjust cooking times if using frozen (thaw before mixing).
  • Adding crispy fried onions on top is optional but adds a nice crunchy texture contrast.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated thoroughly before serving.
