This classic Chicken with Buttered Noodles recipe combines tender, herb-seasoned chicken breasts with rich, buttery egg noodles infused with garlic and olive oil. It’s an easy and delicious meal perfect for weeknight dinners or a comforting family meal.

Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (or your favorite herb)

For the Noodles:

  • 8 oz egg noodles (or your preferred pasta)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • ½ teaspoon salt (or to taste)
  • Freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped (optional for garnish)

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry and season both sides evenly with salt, pepper, garlic powder, onion powder, and dried thyme. This seasoning enhances the flavor and creates a delicious crust when cooked.
  2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown. Remove from heat and set aside to rest.
  3. Cook the Noodles: Bring a large pot of salted water to a boil and add the egg noodles. Cook according to package instructions until al dente, usually about 7-8 minutes. Drain the noodles well and set aside.
  4. Prepare the Butter Sauce: In the same skillet used for the chicken, reduce the heat to low and add the butter and olive oil. Once the butter is melted, add the minced garlic and sauté for about 1 minute until fragrant, taking care not to burn it.
  5. Toss the Noodles: Add the drained noodles to the skillet with the butter garlic sauce. Toss to coat the noodles evenly. Season with salt and freshly ground black pepper to taste.
  6. Serve: Plate the buttered noodles and top with the cooked chicken breasts. Garnish with fresh chopped parsley or basil if desired. Serve immediately while warm.

Notes

  • You can substitute the egg noodles with any pasta you prefer, such as fettuccine or linguine.
  • For extra flavor, marinate the chicken for 30 minutes beforehand in olive oil and herbs.
  • Fresh herbs like thyme or rosemary can be used instead of dried thyme.
  • Butter can be reduced or substituted with olive oil for a lighter version.
  • Ensure the chicken is fully cooked to an internal temperature of 165°F for food safety.
