Ingredients

Scale

Meat

  • 2 pounds ground beef

Vegetables

  • 2 green bell peppers, diced
  • 1 large onion, diced
  • 2 jalapeños, diced (seeds and white insides removed, optional)

Canned Goods

  • 1 15oz can dark red kidney beans, drained and rinsed
  • 1 15oz can chili ready black beans, drained and rinsed
  • 1 15oz can diced tomatoes
  • 1 46oz can 100% tomato juice

Spices

  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon red pepper flakes

Instructions

  1. Prepare the Ingredients: Dice the green bell peppers, onion, and jalapeños (if using), removing seeds and white parts from the jalapeños to reduce heat if desired.
  2. Brown the Beef: In a skillet over medium heat, brown the ground beef until no longer pink, breaking it up into small pieces. Drain excess fat to reduce grease in the chili.
  3. Add Ingredients to Crockpot: Transfer the browned beef to the crockpot. Add the diced green bell peppers, onion, jalapeños, canned kidney beans, black beans, diced tomatoes, and tomato juice.
  4. Season the Chili: Sprinkle in chili powder, cumin, onion powder, salt, cayenne pepper, garlic powder, ground black pepper, and red pepper flakes. Stir the mixture to evenly distribute the spices.
  5. Cook the Chili: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. The flavors will meld and the chili will thicken as it cooks.
  6. Final Taste and Serve: Before serving, taste and adjust seasoning if necessary. Serve hot with your choice of toppings and sides.

Notes

  • For a thicker chili, uncover during the last 30 minutes of cooking to allow excess liquid to evaporate.
  • Use lean ground beef (90% lean or higher) to reduce fat content.
  • Jalapeños are optional; omit or adjust according to your heat preference.
  • Can be made vegetarian by substituting ground beef with plant-based meat or extra beans and vegetables.
  • Leftovers keep well refrigerated for up to 4 days or frozen for up to 3 months.
