Ingredients

Scale

Main Ingredients

  • 1 cup (240g) cottage cheese, preferably small curds and whole milk for best flavor
  • 1 cup (90g) rolled oats
  • 1/2 cup (120ml) applesauce or small grated apple (use sweet, firm varieties like Honeycrisp or Fuji)
  • 1 large egg
  • 1/2 tsp (1.5g) ground cinnamon, good quality
  • 1 tbsp (21g) honey or maple syrup (optional)
  • 1/2 tsp (2g) baking powder
  • Pinch of salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready when your batter is prepared.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, ground cinnamon, baking powder, and a pinch of salt; stir well to evenly distribute the ingredients.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the cottage cheese, apple sauce or grated apple, egg, and honey or maple syrup until smooth and well combined.
  4. Combine Wet and Dry Mixtures: Gradually add the wet ingredients to the dry mixture, stirring gently until all ingredients are fully incorporated and a thick batter forms.
  5. Transfer to Baking Dish: Lightly grease a small baking dish or line with parchment paper, then pour in the batter, spreading it out evenly.
  6. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Cool and Serve: Remove from the oven and allow to cool for 5-10 minutes before slicing and serving warm or at room temperature.

Notes

  • For a vegan adaptation, substitute the egg with a flax egg and use plant-based cottage cheese alternatives.
  • You can omit honey or maple syrup for a less sweet version or adjust sweetness to taste.
  • Using whole milk cottage cheese adds richness, but low-fat options can be used for lower calories.
  • Fresh grated apple imparts a better texture and flavor than applesauce, but applesauce is a quicker alternative.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
