Ingredients

Scale

Sausage Filling

  • 1 lb (450g) sausage meat or ground sausage
  • ½ cup finely diced onion
  • 1 clove garlic, minced
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • 1 tbsp olive oil

Puff Pastry and Topping

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prepare for baking.
  2. Prepare the Filling: Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute, then remove from heat and let cool slightly. In a mixing bowl, combine the sausage meat with the cooked onion and garlic, dried sage, dried thyme, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
  3. Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to ensure it forms a rectangle approximately 10×12 inches (25×30 cm). If needed, trim the edges to create a neat rectangular shape.
  4. Assemble the Sausage Rolls: Spread the sausage mixture evenly along one long edge of the puff pastry forming a log shape, leaving a small border around the edges to seal properly. Roll the pastry over the filling tightly, pinch the edges to seal the seam, and place the roll seam-side down onto the prepared baking sheet.
  5. Slice and Brush: Cut the rolled pastry into 1½-inch (4 cm) thick slices and arrange them evenly spaced on the baking sheet. Brush the tops of each roll generously with the beaten egg to give them a shiny, golden finish once baked.
  6. Bake: Place the tray in the preheated oven and bake for 20-25 minutes until the pastry is golden brown and puffed and the sausage filling is fully cooked through.
  7. Serve: Remove from the oven and allow the sausage rolls to cool slightly before serving. Enjoy them warm or at room temperature as a perfect festive appetizer or snack.

Notes

  • Make sure to fully thaw the puff pastry before rolling out to avoid cracking.
  • Use fresh herbs instead of dried for a brighter flavor if preferred; adjust quantities accordingly.
  • You can substitute sausage meat with your choice of flavored sausage or ground meat for variation.
  • Brush with milk instead of egg if you want to avoid using eggs.
  • These sausage rolls can be made ahead and reheated in a warm oven for best texture.
