Instructions

  1. Prepare the dough: In a bowl, mix together the plain flour, cocoa powder, icing sugar, and a pinch of salt. Rub in the butter until the mixture resembles fine breadcrumbs. Then mix in the eggs and knead quickly with your hands to form a smooth dough.
  2. Chill the dough: Wrap the dough in foil and press it into a flat disc. Chill the dough in the refrigerator for 30 minutes to firm up and make it easier to roll out.
  3. Preheat oven and prepare the baking sheets: Heat your oven to 180°C (fan 160°C) or gas mark 4. Line a couple of baking sheets with baking parchment to prevent sticking.
  4. Roll and cut biscuit shapes: On a lightly floured surface, roll out the chilled dough to about 3mm thickness. Use cookie cutters to cut out festive shapes, placing similarly sized biscuits together on the baking sheets for even baking.
