Instructions

  1. Melt Chocolate: Add the coconut oil to the dark chocolate chips in a microwave-safe bowl. Heat on high in 30-second intervals, stirring thoroughly after each interval until the mixture is completely melted and smooth. Alternatively, melt the chocolate and coconut oil over a double boiler on the stove, stirring constantly to avoid burning.
  2. Prepare Toppings and Equipment: Roughly chop the pecans and have the dried cranberries ready. Lay out 10-12 wooden popsicle sticks and line a large baking sheet with parchment paper to prepare for the apple slices.
  3. Slice Apples: Using a very sharp chef’s knife or mandolin, carefully slice the apples into 1/2 inch thick slices. Remove any seeds gently from each slice to ensure a smooth eating experience.
  4. Insert Popsicle Sticks: Make a small slit at the bottom of each apple slice with a paring knife to ease the insertion of the popsicle sticks. Carefully insert a wooden stick into each slice without splitting the apple too much.
