Instructions

  1. Prepare the Chicken: In a bowl, toss the chicken breasts with chili powder, cumin, paprika, and salt. Heat olive oil in a skillet over medium heat and cook the chicken until fully cooked and golden brown, about 6-7 minutes per side. Remove from heat and let rest for 5 minutes.
  2. Shred the Chicken: Using two forks, shred the cooked chicken into bite-sized pieces. Return to the skillet for a minute to keep warm if desired.
  3. Prepare the Toppings: While the chicken cooks, chop the white onion and cilantro. Slice the avocados thinly and crumble the queso fresco cheese.
