Chewy Toffee Bites are a delightful homemade treat combining rich caramelized sugar, creamy butter, and a silky chocolate topping adorned with toasted pecans and a sprinkle of flaky sea salt. These bite-sized confections are perfect for any occasion, offering a satisfying balance of sweet, salty, and nutty flavors with a chewy texture.

Ingredients

Scale

Toffee

  • 2 cups (400 g) granulated sugar
  • 1 cup (2 sticks) cold unsalted butter, cubed

Topping

  • 1 cup mini semisweet chocolate chips
  • 1/4 cup coarsely chopped toasted pecans
  • Flaky sea salt, for sprinkling

Instructions

  1. Caramelize the sugar: In a medium Dutch oven or heavy-bottomed pot over medium-high heat, evenly sprinkle 1/4 cup granulated sugar. Cook, stirring occasionally, until sugar is melted and amber in color, about 1 minute. Repeat adding sugar 1/4 cup at a time, allowing each addition to melt completely before adding the next. Continue until all sugar is melted and reaches 275° to 280°F on a candy thermometer, indicating the hard crack stage.
  2. Add butter: Remove the pot from heat. Whisk in the cubed cold butter two pieces at a time, stirring constantly and allowing each batch to melt fully into the caramel before adding more. This creates a smooth, rich toffee base.
  3. Portion toffee: Divide the toffee evenly among 30 compartments in two standard-size silicone ice cube molds, using about 1 tablespoon per compartment. This ensures uniform bite-sized pieces.
  4. Add chocolate topping: Sprinkle 2 teaspoons of mini semisweet chocolate chips over each toffee-filled compartment. Let sit undisturbed for about 2 minutes to allow the chips to melt.
  5. Spread chocolate and garnish: Using the back of a 1/2 teaspoon measuring spoon, gently spread the melted chocolate chips into an even layer over each toffee bite. Immediately top each with chopped toasted pecans and a pinch of flaky sea salt to enhance flavor and texture contrast.
  6. Set in refrigerator: Place the molds in the refrigerator and chill for at least 30 minutes, up to 1 hour, until the toffee bites are fully set and firm.

Notes

  • Using a candy thermometer is crucial to achieve the perfect toffee texture and prevent burning.
  • Cold butter helps create a smooth texture; add slowly to ensure proper emulsification.
  • Silicone ice cube molds are ideal for easy removal of the toffee bites once set.
  • Store finished toffee bites in an airtight container at room temperature for up to one week or refrigerate for longer freshness.
  • Toasted pecans can be substituted with other nuts like almonds or walnuts if preferred.
