Ingredients

Scale

Filling

  • 1 lb ground beef
  • 1/2 medium yellow onion, finely minced
  • 4 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • Salt and ground black pepper, to taste
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced pickles

Wrappers & Coating

  • 1314 egg roll wrappers
  • 1 egg white, whisked (for sealing)

Oils for Cooking

  • Vegetable oil for cooking onions and beef (1 tablespoon)
  • Olive oil for frying egg rolls (enough to submerge)

Instructions

  1. Preheat the Pan: Preheat a medium cast iron pan or non-stick skillet over medium heat to prepare for sautéing the onions and cooking the beef.
  2. Cook Onion: Add one tablespoon of vegetable oil and the finely minced onion to the pan. Sauté until the onions turn translucent, about 3-4 minutes, to develop their sweetness and soften the texture.
  3. Add Ground Beef: Add the ground beef to the pan, breaking it up with a wooden spoon. Season with salt and pepper. Cover the pan and cook until the meat just starts to brown and releases juices, approximately 5-7 minutes.
  4. Add Garlic and Seasonings: Stir in the minced garlic, yellow mustard, and Worcestershire sauce. Cook for an additional 1-2 minutes until the garlic is fragrant and the flavors meld.
  5. Drain Grease: Carefully drain off excess grease and juices from the pan to prevent soggy filling. Transfer the cooked beef mixture to a large mixing bowl for combining.
  6. Mix in Cheese and Pickles: Add the shredded cheddar cheese to the warm beef in the bowl and stir until the cheese melts and is evenly incorporated. Fold in the diced pickles, distributing them throughout the filling.
  7. Heat Oil for Frying: In a deep skillet, heat olive oil over medium heat to about 350°F (175°C), ensuring enough oil to submerge the egg rolls for even frying.
  8. Assemble Egg Rolls: Lay one egg roll wrapper flat. Spoon about 2 tablespoons of the cheeseburger filling in a line about an inch from one edge. Fold the corner closest to you over the filling and tuck it under firmly to start rolling.
  9. Seal the Rolls: Fold the side corners towards the center of the wrapper over the filling. Dip your fingers in the whisked egg white and brush along the edges of the wrapper to seal. Roll gently but tightly until fully wrapped.
  10. Fry the Egg Rolls: Carefully place the egg rolls in the hot oil in batches without overcrowding. Fry until golden brown and crispy, about 1-2 minutes per side. Use tongs to turn the rolls once the bottom side is golden.
  11. Drain and Serve: Remove the fried egg rolls and drain on paper towels to remove excess oil. Serve hot with Thousand Island dressing for dipping.

Notes

  • Be careful not to overfill the egg rolls to prevent breakage during frying.
  • Drain the beef mixture well to avoid soggy egg rolls.
  • Maintain the oil temperature at around 350°F for crispy, golden rolls without absorbing too much oil.
  • Use fresh egg roll wrappers for best texture; keep unused wrappers covered with a damp towel to prevent drying out.
  • Thousand Island dressing complements the cheeseburger flavor perfectly but ketchup or ranch dressing also works well.
