Dough
- 150g self-raising flour
- 130g Greek yogurt
Cheese Filling
- 100g grated mozzarella cheese
- 100g feta cheese, crumbled
- 150g cottage cheese
- 2 tsp ground black pepper
Egg Wash and Topping
- Make the Dough: In a large bowl, combine the self-raising flour and Greek yogurt using a spoon to form a rough dough. Knead the dough for about 2 minutes until it becomes soft and light, ensuring it does not stick to your hands. If it does stick, add a small sprinkle of flour. Wrap the dough in plastic wrap and set it aside for 5 minutes to rest.
- Preheat and Roll Out Dough: Preheat your oven to 220°C (450°F). Lightly dust a clean surface with flour and roll out the rested dough into a large oval shape about 0.5 cm thick. Transfer the rolled dough onto a baking tray, ready for assembly.
- Apply Cheese Around Rim: Spread one-third of each type of cheese—mozzarella, feta, and cottage cheese—around the rim of the dough. Sprinkle 1 teaspoon of ground black pepper evenly over the cheese on the rim.
- Fold Dough and Add Filling: Fold the rim of the dough inward to create a thick, cheesy crust. In the center well of the dough “boat,” layer the remaining cheese starting with feta, followed by cottage cheese, and then mozzarella. Sprinkle the leftover black pepper over the cheese filling. Whisk one egg in a small bowl and brush the crust and exposed dough with the egg wash to promote browning.
- Bake and Add Egg: Bake the assembled pie in the preheated oven for 15 minutes. Remove the pie from the oven and create a small well in the center of the cheese filling. Carefully crack the remaining egg into this well. Return the pie to the oven and bake for an additional 6 to 8 minutes, or until the egg is cooked to your preference.
