Instructions

  1. Preheat the oven: Set your oven to 180°C (160°C fan) or gas mark 4 to prepare for baking.
  2. Mix dry ingredients: In a large bowl, combine the oat flour, vanilla whey protein, baking powder, cinnamon, and mixed spice, ensuring they’re evenly mixed.
  3. Add wet ingredients: Stir in the mashed bananas, milk, and beaten egg into the dry mixture until you achieve a smooth cake batter consistency without lumps.
  4. Prepare baking dish: Lightly oil a small baking dish or four individual ramekins using flavourless oil to prevent sticking.
  5. Spoon batter and swirl peanut butter: Transfer the batter evenly into the prepared dish(es) and then spoon dollops of peanut butter on top. Use a knife or skewer to gently swirl the peanut butter through the batter for a marbled effect.
  6. Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the baked oats have risen and turned a golden brown on top.
  7. Cool and serve: Remove from the oven and allow to cool slightly before serving. Enjoy warm topped with yogurt, fresh berries, and an extra drizzle of peanut butter.
