Donut Batter
- 1/4 cup melted regular or vegan butter
- 1 1/4 cup regular milk, oat milk, or almond milk
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 2 cup regular or gluten free all-purpose flour
- 1 cup fresh or frozen blueberries
Vanilla Glaze (Optional)
- 1/2 cup powdered sugar
- 1 tbsp regular milk, oat milk, or almond milk
- 1 tsp vanilla extract
- Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the correct temperature by the time you’re ready to bake.
- Prepare the Batter: In a large mixing bowl, combine the melted vegan butter (or regular butter), your choice of milk (regular, oat, or almond), baking soda, baking powder, sugar, and vanilla extract. Mix these ingredients well.
- Add the Flour: Gradually mix in the flour until just combined. Be careful not to overmix to keep the donuts light and fluffy.
- Fold in Blueberries: Gently fold the fresh or frozen blueberries into the batter, ensuring they are evenly distributed without breaking them up.
- Fill Donut Molds: Grease 14-16 donut molds to prevent sticking. Carefully pour the batter into each mold, filling them but not overfilling to allow space for rising during baking.
- Bake the Donuts: Place the molds in the preheated oven and bake for about 20 minutes, or until a toothpick inserted into the donut comes out clean.
- Prepare the Glaze (Optional): While the donuts are baking, mix powdered sugar, milk, and vanilla extract in a small bowl until smooth.
- Glaze the Donuts: Once the donuts have cooled, drizzle or dip them into the vanilla glaze if desired. The glaze is optional as the donuts are delicious on their own.
Notes
- You can use either regular or vegan butter depending on dietary preference.
- Blueberries can be fresh or frozen; if using frozen, do not thaw to prevent discoloring the batter.
- Do not overmix the batter to keep donuts tender and fluffy.
- Be mindful not to overfill the donut molds to avoid overflow during baking.
- Nutrition facts do not include the optional glaze.
- If using gluten-free flour, expect slight texture variation but the taste remains delightful.
