Crust & Assembly

  • 2 sheets of store-bought pie crust

Glaze

  • 1 cup powdered sugar
  • 12 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Prepare the filling: In a medium pan, melt the butter over medium heat. Add the diced Granny Smith and Honeycrisp apples, then stir in granulated sugar, brown sugar, ground cinnamon, and lemon juice. Cook the mixture for about 5-7 minutes until the apples are tender but not mushy. Remove from heat and let cool completely.
  2. Prepare the crust: Roll out the store-bought pie crust sheets on a floured surface. Cut each sheet into equal rectangles or circles large enough to fold over the apple filling.
  3. Fill and seal pies: Place a spoonful of the cooled apple filling onto one half of each crust piece. Brush the edges with the beaten egg, then fold over the crust to enclose the filling completely. Press the edges with a fork to seal thoroughly.
  4. Egg wash and bake: Preheat the oven to 375°F (190°C). Place the hand pies on a baking sheet lined with parchment paper. Brush the tops of each pie with the beaten egg wash. Bake for about 20-25 minutes, or until the crust is golden brown and puffed.
