Ingredients

Scale

Eggs and Filling

  • 6 eggs (hard boiled, cooked for 10 minutes, peeled and cut in half)
  • 2 tablespoons mayonnaise
  • 1 tablespoon pickles (finely chopped, or use relish)
  • 1 teaspoon Dijon mustard
  • Sea salt and pepper to taste

Breading

  • 1/2 cup flour
  • 2 raw eggs (beaten in a mixing bowl)
  • 1/2 cup bread crumbs
  • 1/2 cup butter crackers (blended into crumbs)
  • Oil spray or melted butter (for brushing)
  • Dill (for garnish, optional)

Instructions

  1. Prepare the Filling: In a mixing bowl, combine the cooked egg yolks, mayonnaise, finely chopped pickles, Dijon mustard, sea salt, and pepper. Mash thoroughly with a fork until the mixture is smooth and creamy like a puree.
  2. Set Up the Breading Stations: Arrange three separate dishes in order: one with flour, another with the beaten raw eggs, and the third with a mixture of bread crumbs and crushed butter crackers. This will create a classic breading station for coating.
  3. Bread the Egg Whites: Take each hard-boiled egg white half and coat it first in the flour, then dip into the beaten eggs, and finally press it firmly into the breadcrumb and cracker crumb mixture to fully coat.
  4. Air Fry the Battered Eggs: Place the breaded egg whites onto the air fryer basket or dish. Lightly spray or brush them with oil or melted butter to help crisping. Air fry at 390°F (200°C) for 4-5 minutes on each side, or until they turn a golden brown and crispy.
  5. Fill the Eggs and Garnish: Remove the eggs from the air fryer and carefully spoon or pipe the prepared yolk filling into each egg white half. Garnish with fresh dill or your choice of herbs if desired. Serve warm and enjoy!

Notes

  • Ensure eggs are hard boiled and fully cooled before peeling to preserve shape.
  • You can substitute mayo with Greek yogurt for a lighter filling.
  • For extra flavor, add paprika or cayenne to the yolk mixture.
  • If you don’t have an air fryer, these can be shallow fried or baked, though texture will differ.
  • Dill is optional but adds a fresh herbal note to the deviled eggs.
