  4. Step 4: Remove the bay leaf and thyme sprig. Stir in all but a handful of the breadcrumb crumbs. Cook over low heat until the sauce thickens. If desired, blitz the sauce for a smoother texture. The sauce can be kept chilled for up to two days.
  5. Step 5: Meanwhile, heat the remaining oil in a frying pan. Fry the reserved breadcrumbs until they are golden and crispy.
